California Pizza Kitchen Recipe

Hey Peeps, here is the recipe for the yummy pizza I made the other night. It really is one of the best things I've ever eaten. I LOVED it. THe name is California Pizza Kitchen Club Pizza:

Dough:
1 1/2 cups warm water                       1/2 tsp salt
1 tbsp yeast                                        3-4 cups flour
1 tbsp sugar

Mix yeast, sugar and water together and let sit for 10 minutes or so, until its bubbly.  Then dump it in your mixing bowl and add salt and flour a cup at a time. (I used the full 4 cups, just see how it is)  It should be a pretty sticky dough but not like crazy. (Mine didn't stick to the sides of my bowl, but it was still pretty sticky)
Let it raise for about 40 minutes covered, and then punch it down and roll it out.  (This will make a jelly roll pan full  and maybe a little extra if you don't like it too thick)

After its rolled out, put it in your jelly roll pan and polk holes in it all over with a fork so it doesn't bubble up.
Now for  a new thing I learned that makes the crust a 1000 times better. Spray it with olive oil or brush some on top of it and then in a seperate bowl, mix:
1/2 cup parmesan cheese (I just used the kind in the container its all I had)
1 tbsp of italian seasoning
(if you don't have italian seasoning you could subsitute it with 1/2 tsp oregano, 1/2 tsp marjoram, 1/2tsp basil, 1/2 tsp salt)
Once that is mixed, spread it all over your pizza on top of the olive oil. PUt it in the oven and cook it for about 10 minutes at 400 degrees or until it starts to brown a tiny bit.

Now for the Pizza Ingredients
2 cups of cooked and cubed (small) chicken
1/2 cup cooked bacon (around a half a package)
2 cups mozzarella cheese
3 cups of shredded lettuce (I shredded mine small)
1 cup romaine lettuce (I didn't have any of this (it was fine without)
4 tbsp of mayo or miracle whip
2 large roma tomatoes (I used big ones out of a garden)
1 avacado thinly sliced

When your pizza dough is done, spread your mozzarella cheese all over and then top with bacon and chicken. Stick it back in the oven until cheese is melted. While it is cooking mix together the lettuces and mayo in bowl. When the cheese is melted pull it out and let it cool for a few minutes (so your lettuce doesn't go soggy), then spread your lettuce all over and then tomatoes and avacado.
I hope you like it. Its my new fave.

(I only added the lettuce to the part I knew we would be eating that night, cuz it goes soggy if not. And poor Zach and Say don't  eat tomatoes. And I didn't really eat all of that that night. I wanted to but couldn't, I was too full.

CRUISE ANYONE?

Okay Josh and I are going on a cruise on Oct. 16th. It ports out of Tampa Fl., it is 7 night. It stops in Belize, Honduras, Costa Maya, and Cozumel. I think it's around $500 per person, give or take $50 or so.
Anyone is invited if they would like to go. If you are a single person, it would be double that I think, cuz you would get your own room and it is based on double occupancy. So find a pal, and come along.
Come on Costa Maya peeps. Remember all the pics of the Mayan ruins? Yep the pyramid steps and all that, that's the one. Come one, come all.

Contact me if interested.

Our house

So lots of peeps have been askin to see a pic of our house, and I was just going to post it on my blog, but Had said not to put pics up of our house on there. And Mag has been wondering about our house too, so I told him I'd put a picture of it on here, so he can start convincing his parents to come here. And everyone else, please come here too! It would be so fun. :)

I haven't really taken pics of the inside of our house, except for the kitchen. Cuz this kitchen made me so happy!!! Living in an apartment with a small kitchen and not enough counter space, and not enough cupboards to hold all my stuff for the past 7 years was really getting old. I love my kitchen now and it makes me so happy to be in it!

The Boys School Shoes

Javie's

Dax's

Toj's

So I bought these shoes for my kids, then Kaitlin, of Kaitlin and Cooper painted all of them. She is now doing this for her job to help put herself through school. She can pretty much do anything you can think of on them. She charges $25 per shoe, but I bet it goes up cuz she is getting pretty busy. I wanted to show you peeps. Pretty sweet huh.

boys dance auditions

Okay, so this isn't the greatest performance they have ever done, but they had to make up their own dance for their audition. Dax and Toj taught it to Jav about 30 minutes before they got there, so he was still trying to learn it. They invited their friend Jaden to come. All in all I think they did a great job. Plus can you believe I posted this?

The Davis Fam

Oh my, Daxie is looking divine. I paid Dax $3 to strip down and go jump in a huge puddle in his undies. Haha, I also have it on a movie clip. This will come in handy down the road.
Mag has this little issue with girls shoes. Josh loves it. All was quiet in his room so we went to check on him and this is what we found. Mag wearing my hooker boots.

Here is cute little Daizee. I couldn't figure out how to turn this. Hey I am doing good to post a pic. This is the first set of pics I have put on here since Toj lost his 4 front teeth. I am breaking out of my comfort zone peeps, breaking out.

Oh my gyash, even about to cry I want to eat her. Of course mostly when I see a pic of her or someone else is holding her is when I want to the most.
So this post is to all the peeps that keep asking me to post a pic, especially Holl and Cin that haven't been able to see her in person.
